1½ ounces Mezcal
¾ ounce freshly squeezed lime juice
¾ ounce Small Hand Foods pineapple gum syrup
Combine the ingredients in a cocktail shaker three-quarters filled with ice. Shake until chilled, about 15 seconds. Strain into a chilled coupe. (No garnish.)
